Breakfast
Yummy Tummy Recipes
As an asian living away from home, it is very important to me that my daughter gets exposed to different tastes, flavors and cuisines. I need her to know that eating rice with sweetened meat dashed with vinegar is as normal as eating bread with butter and jam for breakfast. Since she started eating solids, I’ve been including different ingredients that would tickle her taste buds - ricotta, curry, vinegar, nuts, tamarind, truffle and the list goes on. So here are some of my recipes I’d love to share with you. 😋
Chicken Arroz Caldo
Arroz Caldo or Filipino Breakfast Porridge was one of my favorite breakfast food growing up. The smell of ginger and chicken was something that got me excited in the morning. I remember squeezing generous amounts of calamansi with every bite. Since calamansi is like trying to find a pokémon here in Germany, lemon would suffice. I wanted Sinta to experience and, hopefully, enjoy this childhood memory of mine… and know that breakfast isn’t just about bread, jam and cereals. It can also be about ginger, onions and rice, too!
Ingredients:
2 boneless chicken breasts cut in strips
1/2 cup glutinous rice
1.5 cups chicken stock
1 garlic crushed
1/2 medium red onion minced
1 tbsp minced ginger
1 tbsp lemon juice
2 tbsp olive oil
Instructions:
- Heat oil. Sauté red onion, garlic and ginger until fragrant.
- Add chicken and cook until light brown.
- Add stock and rice. Stir. Close lid and let it boil.
- Once boiling, lower heat. Simmer for 15 mins.
Add lemon juice. Stir. Serve and garnish with green onions. here’s the video: https://www.instagram.com/reel/Cq45DcNqEos/?igsh=MXRoMzc0NDI4NGV3cg==

Banana Cinnamon Pancake
One of our go-to breakfast food. Fast and fun! You can stop after the pancake is cooked but Sinta and I love cutting it up and decorating it with our fruits and berries. Today was happy face man tomorrow may be hungry crocodiles with kiwis.
Ingredients:
1/2 cup mashed banana or 1 medium banana mashed
1 egg
2 tsp flour (we use all-purpose)
pinch of cinnamon
1 tsp of butter
Berries and Fruits for toppings
Instructions:
- In one medium bowl, mix mashed banana, egg, flour and cinnamon. Whisk until well combined.
- Melt butter on a small pan on medium heat.
- Pour mixture. Let it cook for 3-3.5 mins or until the pancake no longer sticks onto the pan.
- Flip and cook for another minute.
- Serve.
- OPTIONAL: spread my homemade peanut butter while hot (see recipe: https://www.instagram.com/reel/CqDNj-7qdGq/?igshid=YmMyMTA2M2Y= )
- Top with your favorite fruits and berries.
